Chicken Curry
Recipe from 'What Mummy Makes' by Rebecca Wilson
Ingredients
oil (for cooking the chicken)
3 chicken breasts
1 1/2 tbsp tomato puree
2 garlic cloves
1 tsp ground turmeric
2 tsp mild curry powder
1 tsp ground cumin
1 1/2 tsp garam masala
1 tsp paprika
400ml can coconut milk
2 big handfuls of frozen peas
Method
- Cut the chicken into small strips, and fry for about 4 minutes
- In a cup add tomato puree, garlic and all of the spices
- Add to chicken and stir for 1 minute
- Add coconut milk, frozen peas, 1/2 can water & simmer for 8 minutes
- Cook your rice
Remember you can swap chicken for alternatives such as lentils and veggies.
